We just got back from a short, amazing trip to visit Nate's sister, Maddog, in Denver. Neither of us had ever been to Colorado before but we will certainly be back in the future!
Day 1: Boulder and Golden
We started our visit with lunch in Boulder with mate and empanadas at Rincon Argentino. This was such a gem of a find! The mate was just what we needed to wake us up after staying up far too late watching the election results. The empanadas were, according to Nate, who studied in Argentina, "authentic and perfect because they were just a little spicier than empanadas in Argentina." This little spot is so colorful with a great outdoor seating area to enjoy the lovely Colorado weather. We absolutely LOVED this place!
Lookout Mountain and Cannonball Creek Brewery
We wanted to see some of the natural grandeur of Colorado but we were a little pressed on time so we drove up to Lookout Mountain. The pictures say it all. The views were absolutely breathtaking. And because every "hike" should end with a toast, we stopped at Cannonball Creek Brewery on the way home. They have 8-14 beers rotating at all times. We loved Brickyard Porter, the Rosemary Sourdough Saison, and the Trump Hands Session IPA, which won Gold for the session IPA at GABF 2016.
